About xing ding mo
A niche wild dried mushroom; small apricot-yellow caps, crisp and chewy.
Health Benefits of xing ding mo
A little-known quality mushroom
Apricot-cap mushroom (杏丁蘑) has ~17.2g protein and ~31.4g fibre per 100g - nutrient density similar to winter mushroom and dried shiitake. Its small, apricot-nut-sized caps are apricot-yellow; rehydrated they're crisp and chewy, great in hotpot and dry-pot stir-fries, holding up to long cooking without falling apart.
Soaking and cooking
Soak 15-20 minutes to restore elasticity; rehydrated caps are ~2-4cm across, small and neat. Recipe suggestion: render belly-pork fat, add the caps and green/red peppers and flash-fry - the mushroom soaks the pork flavour with rich layers; or drop into a ma-la spiced pot or mushroom soup for extra texture.
