About Dried Shiitake
Dried winter-grown shiitake; thick caps, rich aroma, better quality from the long cold-season growth.
Health Benefits of Dried Shiitake
Winter mushroom vs regular shiitake
Dong-gu (冬菇) is shiitake grown in the cold season; slow, low-temperature growth gives thicker, firmer caps that often develop crackle patterns (flower mushroom). Each 100g dried holds ~17.8g protein and ~31.4g fibre - comparable to regular dried shiitake, but more savoury. Flower mushrooms are the top grade - more and deeper cracks mean better.
Rehydrating dried winter mushroom
Soak in 30-40°C warm water 40-60 minutes; cold water is slower but keeps aroma better. Don't throw away the soaking water - it's rich in amino acids and umami; strain and use as a stock base for noodles, braises or soup. Slice the soaked caps for braising, stewing or soup.
