About pu zhong hong mo

Dried wild red mushroom from the northeast; dark red, distinctive, superb for stewed chicken or red-braising.

Health Benefits of pu zhong hong mo

A high-protein, high-fibre wild mushroom

Dried red mushroom (普中红蘑) holds ~18.4g protein and ~24.6g fibre per 100g - fairly nutrient-dense among mushrooms. It grows under pine trees in symbiosis with the roots, so it's very hard to cultivate; almost all on the market is wild-picked, hence the higher price.

Red-mushroom stewed chicken - a northeast classic

The signature dish pairs it with free-range chicken. Soak the dried mushroom, stew with chicken pieces and ginger 1-2 hours so the mushroom aroma and chicken savour fully meld; the soup is rich and fragrant. The mushroom soaks up chicken fat and turns slippery, not dry. A serving (~15g dried mushroom + 200g chicken) gives ~35g protein and ~300 kcal.
