About Mouth Mushroom

A premium grassland mushroom of Inner Mongolia; protein among the best of mushrooms, intensely savoury.

Health Benefits of Mouth Mushroom

Protein that beats most mushrooms

Dried kou-mo (口蘑) has ~38.7g protein per 100g - at the top for edible mushrooms, even exceeding lean beef (~20g) by weight. Rich in glutamic acid and guanylate for natural umami, it needs no MSG - a quality protein source for vegetarians.

Origin and variety

Traditional kou-mo is wild white mushrooms from Inner Mongolia's Xilingol grasslands, named for being shipped through Zhangjiakou ('kou') in the Qing era. The dried mushroom has a distinctive rich aroma; its milky-white soaking liquid is a fine base for mushroom soup and vegetarian stock. Use 5-10g of dried per dish to add savour.

Low-fat, high-protein vegetarian choice

Dried kou-mo has only 3.3g fat per 100g - a nearly 10:1 protein:fat ratio - ideal when weight-managing. Braised with tofu, shiitake and wood-ear, a meal easily delivers 15-20g of quality plant protein at far fewer calories than an equal-protein meat dish.
