About Dried Shiitake
The most homely dried mushroom; rich in umami, a base flavouring of the Chinese kitchen.
Health Benefits of Dried Shiitake
The science of dried shiitake's 'savour'
Drying sharply raises guanylate (a natural savoury nucleotide) in the cells, far above fresh shiitake - the scientific reason dried shiitake 'smells better'. Each 100g dried has ~20.2g protein and ~31.6g fibre; rehydrated, weight rises 3-4x and calories drop to ~50-70 kcal.
The all-purpose kitchen mushroom
Dried shiitake is one of the most-used mushrooms in Chinese cooking: mushroom-braised chicken, shiitake greens, shiitake-minced-pork tofu, shiitake-pork-bone soup... nearly any dish that needs 'umami boosting' can take a few rehydrated shiitake. Ground to powder, it's a natural MSG stand-in to add savour and cut salt.
Choosing and storing
Pick dried shiitake by three things: thick, whole caps; pale-yellow gills (bleached ones are pure white); and a natural mushroom smell, not mustiness. Sealed and dry, it keeps six months to a year; damp ones can mould or attract pests. Rehydrated mushrooms, drained, keep 2-3 days chilled.
