About Sea Lettuce
A dried green-algal seaweed; notable plant protein; a traditional Zhejiang coastal food.
Health Benefits of Sea Lettuce
A great plant-protein source
Dried green laver (苔菜) has ~19g protein per 100g - one of the few vegetable foods over 10% protein. Rich in glutamic acid and other savoury amino acids, it carries natural marine savour that needs no MSG. Its calcium and iron are also top among seaweed - ~250mg calcium per 100g.
Green-laurel peanuts - a Jiangsu/Zhejiang classic
The signature use is laver peanuts: tear the laver, dry-fry over low heat until crisp, toss with fried peanuts - savoury, crisp and aromatic, an excellent beer snack. It also mixes into vegetarian fillings for buns/dumplings, or into egg-fried rice for a marine savour. Use 5-8g dried per serving (under 12 kcal).
