How suji is made

Suji (素鸡) is layered bean-skin rolled, wrapped in cloth and steamed to hold shape. Tying tightness sets the texture - firm rolls slice with a fibrous, chicken-breast-like bite; looser rolls show layers and soak up sauce. It's common in vegetarian and Jiangnan dishes, as cold plate or hot.

Suji vs real chicken nutrition

100g suji has ~16.5g protein, about two-thirds of chicken breast's ~25g, but 12.5g fat - higher than chicken breast's near-zero. It has no cholesterol and keeps soy isoflavones. As an occasional meat substitute, pair with plenty of fresh vegetables for balance.

Classic ways to cook suji

Slice and fry golden both sides, then red-braise with soy, sugar and star anise - a common Jiangnan dish. Or chunk it with fresh peas and pickled greens. Cold suji: thin slices with garlic, chili oil and vinegar - a refreshing vegetarian summer plate.
