Both come from soy milk's surface film; bean-skin (豆腐皮) is lifted as one whole thin sheet while bean-stick is pulled into strips. Bean-skin is thinner and larger with slightly less fat. At ~44.6g protein per 100g it's an equally protein-dense plant food.
