Protein at the top of soy foods

Bean-stick (腐竹) is the film that forms on boiling soy milk, lifted and dried, concentrating soy protein and fat. 100g holds ~44.6g protein - about 5.5x block tofu, among the most protein-dense plant foods. Vegetarians can approach animal-protein amino-acid ratios with it.

Dry bean-stick stores long; soak in warm water ~30 min until fully rehydrated (it expands 2-3x - 20g dry becomes ~50-60g). It absorbs flavour strongly, so braising with red-braised pork, mushrooms or black fungus gives a chewy, layered texture.

Cooking variety

Use it cold, red-braised, in soup or hotpot. Cold bean-stick with cucumber shreds and garlic is fresh and appetising; red-braised with soy and rock sugar is savoury-rich; it's also a classic in vegetarian 'Buddha jumps wall' and lo-han dishes, soaking up many broths.
