About shui fa mu er

Health Benefits of shui fa mu er

Calories 'cliff-drop' after soaking

Rehydrated wood-ear fungus drops from 205 kcal (dried) to about 21 kcal/100g, because dried fungus soaks up 5-7x its own weight in water. 100g provides ~2.6g dietary fibre and only 21 kcal - a classic 'eat it and feel full for nothing' food. Its crisp bite adds texture without a meaningful calorie load.

Safety when soaking

Soak wood-ear fungus the same day you plan to eat it - never leave it overnight. Left at room temperature for more than 4 hours, it can grow Bongkrek-producing bacteria (Pseudomonas cocovenenans), whose toxin can be fatal. Soak it right before cooking, drain and cook it through in one meal. If prepping ahead, refrigerate and finish within 24 hours.
