How qian-zhang is made

Qian-zhang (千张, also 百叶/干豆腐) is tofu set, then pressed in thin sheets and layered - the name means 'a thousand sheets of paper'. 100g has ~24.5g protein; it's flexible enough to be tied in knots without breaking. Made across northeast, north and Jiangnan with slight thickness/texture differences.

Classic knots and wraps

Cut into strips and tie into 'qian-zhang knots'; stewed with pork belly they beat the meat in flavour after soaking up the stock. Filled with mince and shepherd's purse, steamed or braised, the wrap is an elegant banquet cold plate. In hotpot, 30s-1min poaching is enough and it never disintegrates.

24.5g protein, 16g fat, fairly high calcium

Layered and pressed, its protein density beats ordinary pressed tofu, and calcium is comparatively high since gypsum or brine sets it. With a fairly complete amino-acid profile, it suits vegetarians and high-protein diets.
