Health Benefits of Silken Tofu

Its different coagulant

Most boxed tofu is silken (内酯) tofu, set with glucono-delta-lactone (GDL) rather than brine or gypsum. GDL sets it extremely fine and even with almost no beany taste - fine to eat straight. At just 49 kcal per 100g it's one of the lowest-calorie tofu family.

Best ready-to-eat, cold

Silken and mild-smelling, it's ideal for cold dishes. The classic is century-egg tofu: invert it on a plate, add chopped century egg, soy sauce, vinegar and sesame oil, scatter scallions. Or serve Japanese-style 'hiyayakko' with shoyu and bonito flakes.

Lower calcium - keep in mind

vs gypsum tofu, silken tofu has far less calcium (~17mg vs ~150mg/100g). If you're eating tofu for calcium, choose gypsum-set. Silken has the smooth, low-calorie edge for those prioritising texture and calories.
