About Soft Tofu

Gypsum-set silken tofu; fine and smooth, great cold or in soup.

Health Benefits of Soft Tofu

Southern vs northern tofu

Southern (silken) tofu is set with gypsum (calcium sulfate) at ~85-90% water, as fine and smooth as pudding. vs northern tofu (~80-85% water), it's softer - best cold, in soup or steamed. Only 57 kcal and 6.2g protein per 100g - a low-calorie, high-protein daily food.

Gypsum tofu's calcium advantage

As a gypsum-set tofu it holds ~100-120mg calcium per 100g, far above silken (GDL) tofu's ~17mg. A 200g bowl of southern-tofu soup gives ~200-240mg calcium. For lactose-intolerant people or vegetarians, gypsum-set southern tofu is a quality plant calcium source.

Classic dishes

Mapo tofu needs southern tofu for that 'tender but not breaking, spicy and savoury' texture. Century-egg tofu and scallion tofu are classic cold plates. Everyday tomato-tofu soup and crucian-tamarind-fish-tofu soup let it soak up broth and melt on the tongue.
