About Black Wood Ear

One of the most common dried mushrooms; expands several-fold when soaked; crisp and chewy, good cold or hot.

Health Benefits of Black Wood Ear

Fibre density among the top of mushrooms

Dried wood-ear holds ~29.9g fibre per 100g; even rehydrated, fibre stays ~6g by wet weight. Its gel and fibre swell with water in the gut to aid movement. Since you use small amounts (3-5g dried → 30-50g soaked), actual calories and carbs are negligible.

Soaking and safety

Soak dried wood-ear in cold water 1-2 hours. Never soak more than 8 hours (especially at warm-room temperature) - long soaking can grow pathogenic bacteria (e.g. Pseudomonas cocovenenans) that make toxin. Best practice: soak what you'll use, finish it in one go, eat promptly. Leftovers, drained, should be eaten within 24h refrigerated.

An all-purpose crisp ingredient

Wood-ear is crisp and nearly any ingredient pairs with it: cold-tossed (vinegar + garlic + chili oil), mu shu pork (wood-ear + egg + meat + day-lily), wood-ear-stir-fried yam, wood-ear-red-date soup... It doesn't discolour or taste-warp in hot stir-fries and keeps its crunch - one of Chinese cooking's go-to 'texture' ingredients.
