About da hong gu

A large wild red mushroom, richly valuable for protein; a premium soup ingredient in Fujian and Yunnan.

Health Benefits of da hong gu

Protein among the best of mushrooms

Dried red mushroom (大红菇) has ~24.4g protein per 100g - high among edible dried mushrooms. It's a mycorrhizal fungus that can't be cultivated, so everything on the market is wild-picked and pricey. It stews a naturally ruby-red broth, rich in red-mushroom polysaccharides and natural pigments, with a distinctive taste.

Red-mushroom soup - a Fujian classic

The famous uses are Fujian red-mushroom chicken soup and red-mushroom rib soup. Rinse the dried mushroom briefly and add directly to the pot (don't soak long or the colour and aroma are lost); the broth turns a bright, translucent red with a deep mushroom note. It doesn't endure long cooking - add it 15-20 min before the soup is done. Three to five (10-15g) makes a nourishing pot for 4-6 people.
