About Beef Shank
An extremely high-protein cut, almost pure collagen.
Health Benefits of Beef Shank
A pure-collagen high-protein food
100g of beef tendon (niu-ti-jin) has 34.1g protein, only 0.5g fat and 151 kcal - among the most protein-dense animal foods. Almost entirely collagen and elastin with negligible fat, it is excellent for high-protein, low-fat eating.
Collagen's amino acid profile
Its collagen is rich in glycine, proline and hydroxyproline - non-essential amino acids the body can make, but dietary collagen supplies material supporting joint and skin health. Its proline runs 3-4x ordinary lean meat.
Long simmering to tenderness
Beef tendon is extremely tough; slow-cook 2-3h (pot) or 40-50 min (pressure cooker) until soft. Simmering with brisket is classic - the brisket's fat infuses flavour while the tendon's collagen thickens the broth.
