Green beans contain natural antinutrients (PHA lectins and saponins); eating raw or undercooked ones can cause food poisoning. The key is cooking until they lose their raw-green colour and beany taste - usually 10+ minutes boiling or thoroughly stir-frying - which inactivates the lectins.
