About Dried Persimmon

Persimmons peeled and sun-dried; the white frost is natural fruit-sugar crystals.

Health Benefits of Dried Persimmon

The white frost is natural fruit sugar

Dried persimmon (柿饼) is 250 kcal/100g, 3.6x fresh persimmon (70 kcal). During drying, water evaporates and internal glucose/fructose crystallises as white 'persimmon frost' on the surface - a purely natural physical process, not mould or additives. One piece ~40-50g is 100-125 kcal, a reasonable seasonal dessert.

Tannin notes

Unripe fresh persimmons hold fairly high tannin; eating a lot on an empty stomach may irritate the stomach lining. Tannin drops during making but persists. Don't eat dried persimmon fasting and in bulk; one or two at a time, and not together with a large amount of high-protein food (crab, milk), so tannin doesn't bind protein into hard-to-digest lumps.
