Peaches are a traditional Chinese summer fruit; from May to September various varieties appear - white-flesh, yellow, kubo, flat 'pan' peaches, each with its own character. In-season peaches are firm-tender and juicy, but they ripen quickly - keeping 2-3 days at room temperature before they turn soft - so eat soon after buying.
