About Enoki Mushroom

A common fresh mushroom with long white stems; crisp, a hotpot and cold-dish star.

Health Benefits of Enoki Mushroom

A low-calorie 'diet-friendly' food

Enoki mushroom is only 26 kcal per 100g - about like lettuce, among the lowest-calorie fresh mushrooms. ~89% water and ~2.7g fibre make it satiating with almost no calories; a pack (~200g) is just ~52 kcal. Its chitin fibre isn't fully digested, so it stays in the gut longer, keeping you full.

Perfect for hotpot and cold dishes

Enoki cooks fast - 30s to 1 min in hotpot; longer turns it tough and chewy. For cold dishes: blanch 30s, cool, dress with garlic, light soy, vinegar and a little chili oil. It also suits bacon-wrapped roasted enoki and egg-fried enoki - keep the cooking short for crunch.

The 'see you tomorrow' science

Enoki's chitin (the main component of fungal cell walls) isn't broken down by the human body (no chitinase), so some passes through largely intact - the origin of 'see you tomorrow'. That's not a bad thing - the undigested fibre adds stool bulk and aids bowel movement. Chewing well reduces it.
