Fermentation and nutrition

Fermented tofu (腐乳) is tofu inoculated with mould, solid-state fermented, then salted and aged in seasoning. Fermentation breaks soy protein into easier-to-absorb peptides and amino acids - the source of its umami. It also produces characteristic savoury compounds and removes the beany note.

High-sodium condiment; watch amount

Fermented tofu is salty (~3000-5000mg sodium per 100g); use just 1/4-1/2 piece (~5-10g) per meal. Beyond congee, its liquid seasons noodles, stir-fried water spinach, or works as a hotpot-dip base - one piece can lift a whole table.

Red, white and green varieties

Main types: red (red yeast rice, sweeter), white (no red yeast, milky, soy-forward) and green (stinky - pungent smell, mellow taste). Regional styles differ: Cantonese is sweeter, Yunnan spicier, Jiangsu/Zhejiang often aged with distilled-wine lees - choose what you like.
