About Stinky Tofu

Fermented/soaked tofu, then fried; a snack that's crisp outside, tender inside.

Health Benefits of Stinky Tofu

Fermentation and flavour

Stinky tofu splits into fermented and non-fermented types: fermented (Changsha style) is mould-fermented, producing a distinctive sulphur aroma; non-fermented (Nanjing style) soaks in amaranth-stem brine. Both build a fine, porous interior that turns crisp-outside, tender-inside when fried.

Protein and calories

Fried stinky tofu has ~8.5g protein and ~9g fat per 100g - about 130 kcal. vs plain tofu, frying adds fat without markedly cutting protein. A ~200g serving gives ~17g plant protein, and pairing with pickled veg and chili sauce rounds out the flavour.

A fresh view of a street snack

Often called 'junk food', stinky tofu is basically a high-protein fermented tofu, and fermentation creates small peptides and amino acids that are easily absorbed. Choose reputable shops using fresh oil, and pair with plenty of vegetables and light sides so the classic snack can also be balanced.
