About White Wood Ear

White wood-ear (a.k.a. tremella), one of the four great Chinese tonic foods; translucent and silky when soaked.

Health Benefits of White Wood Ear

Tremella's nourishing gel

Each 100g dried white wood-ear holds ~30.4g fibre and ~10g protein. Rich in plant gel and tremella polysaccharides, it expands 10-15x when soaked; simmered, the soup turns thick and silky, melting in the mouth. Tremella polysaccharide is a non-starch polysaccharide that disperses into a viscous gel - the source of its signature 'strings'.

Classic tremella soup

Tremella-lotus-seed soup, red-date-tremella soup and rock-sugar-snow-pear-tremella are all classic nourishing sweets. Soak dried tremella in cold water 2-4 hours, tear into small pieces, add plenty of water, bring to a boil then simmer 1-2 hours until thick. Simmer with red dates and goji; add rock sugar 10 minutes before the end. Chilled, it's a refreshing summer dessert.

Portion and choosing

Use ~10-15g dried (150-200g soaked) - plenty for the family. Prefer naturally pale-yellow tremella (not bleached white), whole intact caps and a light fresh scent. Tremella itself is low-calorie, but the dessert usually loads rock sugar - use less or a sweetener substitute if watching calories.
