A naturally occurring savoury compound
MSG (monosodium glutamate) is the sodium salt of a non-essential amino acid naturally present in tomatoes, mushrooms, cheese and seaweed. The 'umami' it gives is the fifth basic taste after sweet, sour, salty and bitter. MSG itself has no protein but about 268 kcal per 100g (from glutamate); a dish uses ~0.5-1g, so calories are negligible.
Used sensibly to reduce salt
A small amount of MSG restores savouriness while you cut salt in cooking - 'less salt without less taste' is the healthy way to use it. About 0.5g of MSG carries ~130mg sodium (equal to ~0.3g salt), so swapping some salt for MSG can lower total sodium.
