Health Benefits of pao cai

A natural probiotic source from fermentation

Kimchi is ~24 kcal per 100g, with natural lactic-acid bacteria, vitamin C and fibre. In fermentation, lactic-acid bacteria turn the cabbage's sugar into lactic acid, creating the sour flavour while cutting calories. It's fairly salty (about 500-800mg sodium per 100g), so treat it as a flavour side, not a main dish.

A tasty side, mind the salt

As a rice companion or appetiser (about 50g a serving), kimchi livens up plain food without hurting health. Korean kimchi, Sichuan paocai and German sauerkraut all ferment by the same principle. It's low-calorie but high-salt, so trim salt in the rest of the meal to balance it.
