Eggplant itself is only 23 kcal/100g with 0.2g fat - extremely low-calorie. But its sponge-like flesh absorbs oil easily; red-braised and yuxiang eggplant often soak up so much oil the cooked dish can exceed 10x the raw ingredient's calories.
Rich in anthocyanins and fibre
Purple eggplant skin is rich in anthocyanins, a natural antioxidant. Its fibre is also decent, aiding bowel movement. Eat with the skin for the anthocyanins, and control cooking oil.
Recommended low-oil cooking
To cut oil absorption: salt diced eggplant 10 min and squeeze out water; or steam it soft before stir-frying; or use an air fryer/oven. Steamed eggplant with garlic, or cold-tossed, are both delicious and low-calorie.
