Allicin: the star compound born from crushing
A whole clove has little obvious smell; cutting or crushing lets the enzyme alliinase reach alliin and produce allicin - the true source of garlic's pungency and antimicrobial activity. Garlic is ~126 kcal per 100g dry, but a single dish uses only grams, so total calories are negligible. Allicin is heat-sensitive: quick stir-fry and raw preparations preserve it best.
Raw and cooked garlic each shine
Crushed, sliced and minced garlic befriend stir-fries - but don't scorch the oil it in or it turns bitter. Garlic sauce (pounded raw garlic, oil, salt) suits white meats and cold dishes. Sweet-vinegar garlic and laba garlic are pickled versions, sour-sweet and crisp with far less bite.
