Health Benefits of Century Egg

High protein, easy to digest

Century egg is duck egg treated with alkaline materials (lime, ash). The alkali denatures and sets the protein into a translucent amber jelly white and dark-green yolk. Partial breakdown of protein into amino acids gives its signature savoury, mildly alkaline taste.

Improved protein digestibility

Alkali treatment partly breaks the protein down, making it easier to absorb. 100g has about 14.2g protein, higher than fresh duck egg (12.6g). Minerals such as iron and zinc also dissolve out more readily after treatment.
