Chives' signature scent comes from allyl sulfides and other sulfur compounds, related to the flavour chemicals in garlic and onion. Chives are only 26 kcal with ~2.4g protein per 100g, and rich in carotene and vitamin C. The first spring harvest is the most tender and flavourful.
Many classic uses
Chive scrambled egg (a national home dish), chive pockets (crisp on the outside, savoury inside), chive-pork dumplings and grilled chive skewers are all classics. A 15-30 second hot stir-fry is enough; longer cooking releases water and turns them tough. In dumpling filling, add salt last to keep them from weeping.
Who should watch it
Chives have coarse fibre and a chewy bite, so people with a tender stomach shouldn't overdo a single serving. In traditional terms they are warm and 'move qi'. Spring chives are best - the old saying that June chives 'stink and scare dogs' reflects how season matters.
