About Green Onion

China's most basic seasoning vegetable, rich in allicin-like compounds.

Health Benefits of Green Onion

The first choice for natural aroma

Spring onion derives its pungent scent from allyl sulfides and other sulfur compounds. At ~30 kcal per 100g, the white bulb is more pungent while the green leaves are sweeter. In Chinese cooking 'onion, ginger, garlic' are the three aromatics; blooming sliced onion in hot oil first lifts the whole dish's aroma.

Good raw and cooked

Raw (shredded with roast duck or for dipping in sauce), stir-fried (lamb with scallions, beef with scallions) or in fillings (pork-scallion dumplings) are classics. Use the white and green separately: white for stir-frying and fillings, green for soup and garnish. Don't cook long - stir until slightly soft and fragrant.
