Health Benefits of Amaranth
The nutrition behind a natural 'dye'
Amaranth's purple juice comes from betalain, also an antioxidant. Amaranth is just 21 kcal per 100g with an outstanding calcium level for a vegetable (~200mg). There are green and red types; red amaranth has more betalain and higher nutritional value.
Garlic stir-fry is the classic
Garlic amaranth: bloom garlic, add amaranth over high heat, ~1 minute; the purple liquor released is the soul of the dish eaten with rice. No need to add water when stir-frying - it lets out plenty. A blanched cold amaranth is also refreshing. Choose large, intact, brightly coloured leaves.
