The 'flavour star' of Western cooking
Butter is ~717 kcal per 100g, about 81% milk fat (medium/short-chain saturated fat plus a little natural trans fat). The rich milky aroma and flaky crispness of pan-seared steak, French croissants and butter cookies all come from it. Clarified butter (ghee) has a higher smoke point for high-heat searing.
Portion really matters
