Health Benefits of Doubanjiang

The 'soul' seasoning of Sichuan cooking

Toban-djan (broad-bean paste) is ~178 kcal with 13.6g protein per 100g. Made by fermenting fava beans - especially Pixian douban - it develops a deep aroma and umami over long ageing. A mapo tofu or twice-cooked pork uses about 15-30g, or ~27-53 kcal.

Sodium-conscious use

Douban paste is a savoury, salty composite condiment high in sodium. Using it to partly replace salt in a dish lets you cut sodium without cutting taste. It also carries fat - bloom it in a little oil over low heat first for a red oil and more aroma without scorching.
