White radish is just 21 kcal per 100g, with good vitamin C and sulfur compounds such as glucosinolate. It naturally contains amylase and mustard-oil glycosides, the scientific basis for the folk belief that 'radish aids digestion'. Its fibre is mostly soluble, so it stays crisp and never scratchy.
A versatile vegetable, raw or cooked
